WHICH MARGARINE IS BEST FOR VEGAN BAKING

One of the greatest things to remember is that the Margarine you use in baking your Vegan cakes makes a whole difference to the eating quality.
Usually for lighter cakes, I use TREX.
It is beautifully aerated, and provides a great No Hydrogenated Oil, E Numbers, Colours and Preservatives alternative to Butter.
Another great tip for your cakes is to use sufficient air in sponge type cakes.
Make sure you do not knock the tin and all the air out before baking.
Usually all my cakes are baked at 180oC for a minimum of 25 mins or more for fruited or vegetable and t ingredient cakes.
Finally, Carrot cake is best baked with Oil.
When you bake with a vegetable, you need to cook it properly. By using oil you maintain moisture and the vegetable that has been grated does not just absorb a lot of margarine and become oily.
