Served with Rice, this stew makes a beautiful accompaniment to any meal.

You could even combine with a beautiful leafy salad and wholemeal pitta bread warmed in a toaster.

For a small pot of this beautiful stew, I used:

 

2 cups of green mung beans

1/2 tin of coconut milk

1 Tbsp of Turnahpots Hot Jerk ground seasoning (or Hot Jerk seasoning from the cookbook)

1 Tsp Oregano

Salt to taste

and TIME :)

MungBean StewRinse the mung beans and then put them to boil.  You will need almost 6 cups of water, if not more.

Mung beans are quite thirsty and you want to avoid drying them out.

When cooked, I like them to be a little mushy so I cook them until they appear mushy.

Add all seasonings and coconut milk ( DO NOT ADD SALT early!  It will make your beans or peas Hard!!)

Allow the stew to cook in the seasonings for another 5-7 minutes.

Have all the other parts of your meals ready (Rice or Pitta Bread and leafy salad)

Now serve this hearty and healthy meal.
